Suet Explained
What is Suet?
Suet is a raw, hard fat that is found around the loins and kidneys of certain animals such as cows, lamb or sheep. This has been prized in past cultures/civilizations as a primary cooking oil and for its great taste. Whereas the muscular fat on beef is what you commonly see on a steak for example. This fat is much softer and is not what surrounds particular organs.
Tallow has lost a lot of popularity over the last 50-75 years and is very difficult to find. If you do find tallow, whether online or in a market/grocery it is most likely rendered muscular fat. The reason why most use muscular fat, is because there is much more per cow compared to suet making it cheaper product to produce. While having a lower smoke point and containing fewer essential vitamins and minerals i.e. stearic acid. We differ in business practices than our competitors because we believe individuals should have access to have the highest quality cooking oil that humans can consume.
